Flourless Chocolate Cake

The good thing about flourless chocolate cakes is that they have only a few ingredients and are super easy to make. But it's usually pretty hard to find one without heaps of sugar in it, that still tastes good!

Here is my flourless chocolate cake creation, not completely sugar free BUT half the amount of most! It is loved by children and adults so suitable for any age birthday. I hope you enjoy it :-)

Flourless Chocolate Cake


Ingredients: 
5 free range eggs
200 grams of coconut oil
200 grams of almond meal or flour
100 grams of coconut sugar
200 grams of 70% dark chocolate (dairy and/or soy free if you wish)

Method:
1.    Melt the chocolate and coconut together, then mix in the almonds. Set aside to cool a little.

2.    Separate 4 of the eggs. Mix 1 whole egg and 4 yolks with the coconut sugar until smooth. Then mix this with the chocolate mixture.

3.    Beat the 4 remaining egg whites until they are stiff. Using a metal spoon, carefully fold the egg whites into the chocolate mixture.

4.    Pour into a non-stick spring-form baking tin and bake at 170 degrees C. Set timer for 30 minutes and start checking to see if it’s cooked from there. Cooking time between 35-45 minutes depending on your oven. This cake will still taste yummy is slightly under cooked - much better than over cooked!

If you wish to ice this cake, combine 100grams of 70% chocolate with 150mls of coconut cream on the stove and melt together. Spread over the cooled cake and set in the fridge.

Serve up with cream, strawberries to friends on a special occassion!

Notes: This cake is dairy and gluten free. Paleo friendly. Contains nuts.
