  1. Heat the coconut oil in a large sauce pan on a medium heat.
  2. Once melted add the grated courgette and garlic.
  3. Sauté for a few minutes until the courgette is less wet appearing. Whilst this is cooking, get your spices ready to add to the pan.
  4. Turn the heat down a little and add in all the spices plus the salt and tomato paste. Cook for a minute.
  5. Add the lemon juice and coconut cream, stir well to combine. Bring to a simmer.
  6. Add the chicken, cover and simmer for approximately 20 minutes on a low/medium heat.
  7. Remove the butter chicken and make sure it is cooked through. Serve and enjoy!
Recipe Notes

During the 10 Week Challenge, this is a great meal for any night of the week. And tastes even better as leftovers.

Add some Cayenne pepper for extra spice if you wish.
