These remind me of Roses Fudge Chocolates. They are, in my opinion, way more tasty though and have less sugar! They are a great pudding and sweet treat.
They contain no refined sugar, are dairy free and paleo friendly.
Frozen 'Caramel' Fudge
8 Tablespoons of coconut oil, not melted
3-4 Tablespoons of carob powder
1-2 Tablespoons of honey or pure maple syrup (I use 1)
2 Tablespoons of almond butter
1/4 teaspoon of vanilla bean paste (I used Queen, even though it contains traces of sugar, not a big deal)
Place all ingredients into a double boiler and stir until melted and well combined. Pour into a ice cube tray and place in freezer. Chill for an hour before serving.
Each serving contains approx 3 grams of sugar if you use 2 Tablespoons of honey.
