Ingredients
Servings: (6 small pancakes)
Instructions
  1. Throw all ingredients into a bowl or jug and blend with a blending stick. Or mix together in NutriBullet or similar.
  2. Let the mix sit and whilst you heat a fry pan to a medium temperature.
  3. Add approximately 1 teaspoon of coconut oil per pancake. Pour in the mixture to approx the circumference of a large can of tuna.
  4. Cook for 2-3 mins on each side until golden brown. When you go to flip, if the mixture breaks up - cook for longer before flipping.
  5. Eat on their own but to make a balanced meal, serve with bacon and fried egg. No need for maple sauce as the pancakes are sweet enough!

    My daughter has this every morning. But even simpler 1 banana, 1 egg. Pinch of cinnamon. With bananas and maple syrup on top. Yummy
