Make a meal from these pancakes by adding some bacon and fried egg!

Ingredients
- 2 medium bananas
- 3 medium free range eggs
- 3 Tablespoons Coconut Flour
- 1/2 teaspoon Vanilla Essence (optional)
- Sprinkle Cinnamon (optional)
- Coconut oil for frying
Servings: (6 small pancakes)
Instructions
- Throw all ingredients into a bowl or jug and blend with a blending stick. Or mix together in NutriBullet or similar.
- Let the mix sit and whilst you heat a fry pan to a medium temperature.
- Add approximately 1 teaspoon of coconut oil per pancake. Pour in the mixture to approx the circumference of a large can of tuna.
- Cook for 2-3 mins on each side until golden brown. When you go to flip, if the mixture breaks up - cook for longer before flipping.
- Eat on their own but to make a balanced meal, serve with bacon and fried egg. No need for maple sauce as the pancakes are sweet enough!

Banana Pancakes

My daughter has this every morning. But even simpler 1 banana, 1 egg. Pinch of cinnamon. With bananas and maple syrup on top. Yummy
