Ingredients
- 2-2.5 cups Grated Red or Orange Kumara (don't squash it into the cup!)
- 2 Eggs (free range)
- 2 teaspoons Vanilla Essence
- 2 Tablespoons Honey
- 2 Tablespoons Coconut Sugar
- 1/2 cup Coconut Oil Melted
- 1/3 cup 100% Cocoa Powder (or 1/2 cup cacao powder)
- 1/2 teaspoon Baking Soda
- 1 teaspoon Baking Powder Gluten Free
- 2 Tablespoons Coconut Flour

Instructions
- Preheat oven at 180ºC.
- Combine all ingredients in a bowl and mix well.
- Place mixture in a square tray lined with baking paper. I used a silicon baking dish.

- Bake for 20-25 minutes.
- Allow to sit for 5-10 minutes in the dish until slightly cool and then carefully tip onto a cooling tray.

- Serve slightly warm with whipped cream, coconut cream, greek yogurt or berries!

Recipe Notes
If you are taking this to a event where the people are used to a little bit more sweetness than you, add in some chunks of 70% dark chocolate. Or serve with a homemade chocolate sauce made of melted 70% dark chocolate and cream/coconut cream, mixed together over low heat.
