Christmas Ginger Cookies
It’s nice to have a healthy treat at Christmas time and nothing beats a ginger cookie! Whether you want to make gingerbread men, ginger cookies or ginger christmas trees – you can use this quick and simple recipe. This recipe is gluten, dairy and egg free.

  1. Preheat the oven to 160 degrees C.
  2. Line 1-2 baking trays with baking paper.
  3. In your NutriBullet or similar, place the sunflower seeds and linseeds and blitz until a fine powder.
  4. Place ground sunflower seeds, linseeds, almond flour, coconut sugar, baking soda, salt and spices in a large bowl – mix well to combine.
  5. Boil some water and place 2 TB in a cup with molasses and coconut oil. Stir until oil melts and they all combine.
  6. Add wet ingredients to dry and mix into a dough.
  7. Use your hands to make the dough into 20 small balls and place on a baking tray. Squish flat with slightly wet fingers.
  8. Bake for 12 minutes, this will make them crisp on the outside and chewy in the middle.
  9. Cool before enjoying with your favourite cuppa!
Recipe Notes

If you are making these for children – they may find the molasses a strong flavour, you can leave it out or swap for honey.

If making gingerbread bread, roll the mixture between baking paper.
