Ingredients
- 1 large Orange
- 4 large Eggs
- 1/3 cup Honey
- 1/2 teaspoon Vanilla Essence or Almond Essence
- 1 1/2 cups Almond Flour or Meal
- 2 Tbspn Tapioca Starch/Flour
- 4 Tbspn Coconut Flour
- 1/2 tspn Sea Salt
- 1 tspn Baking Soda
- 1/2 cup Dried Cranberries
- 1/2 cup Dried Apricots chopped
- 70 grams Raw Pistachios
- 70 grams Raw Walnuts chopped

Instructions
- Wash the orange and boil it whole (peel and all) for 1 hour until it is soft.
- Preheat the oven to 160 degrees C.
- Place whole orange (peel and all) in a kitchen blender and blend until smooth.
- Add eggs, vanilla and honey to the blender and blitz well.
- Next sift the tapioca and coconut flours into the wet mix and then add the almond flour, baking soda and salt. Blend well again.
- Transfer mixture to a bowl and stir in cranberries, apricots, pistachios and walnuts.
- Pour mixture into a greased, coconut flour dusted 8 or 9 inch pan, I used a silicon pan and it worked well.
- Bake for 35-45 minutes (depending on your oven), or until a knife stuck in the centre comes out clean. I recommend that you watch the progress after 30 minutes and it can become dry if over cooked.
- Cool in the pan 10 minutes then flip carefully onto a rack to cool.
Recipe Notes
You could make using a stick/hand blender too and then complete the rest of the instructions in a mixing bowl – combining super well by hand.
